Quinoa Salad with roasted vegetables, artichokes and apple
- 2 cups quinoa
- 1 onion – peeled and thick sliced
- 2 red peppers – cut in half and cored
- 3 zucchini cut in half
- 1 cup marinated artichoke – sliced
- 1 granny smith apple – peeled and diced
For the dressing:
- 1/2 cup apple cider vinegar
- ½ cup maple syrup
- 1 cup olive oil
- 2 tbsp Dijon mustard
- Fresh chopped parsley and tarragon
- Salt and pepper to taste
Method:
Cook quinoa to package specifications – cool and reserve
pre heat the oven to 400 F – toss the onions, red peppers and zucchini in a little oil and evenly place on a baking sheet – roast for 10 minutes, cool and dice .
Whisk to gather all dressing in a stainless steel bowl – set aside.
Fold together apples, artichokes, roasted veg into the cooked quinoa, add dressing and season to taste – chill and serve!
