Quinoa Salad with roasted vegetables, artichokes and apple

  • 2 cups quinoa
  • 1 onion – peeled and thick sliced
  • 2 red peppers – cut in half and cored
  • 3 zucchini cut in half
  • 1 cup marinated artichoke – sliced
  • 1 granny smith apple – peeled and diced

 

For the dressing:

  • 1/2 cup apple cider vinegar
  • ½ cup maple syrup
  • 1 cup olive oil
  • 2 tbsp Dijon mustard
  • Fresh chopped parsley and tarragon
  • Salt and pepper to taste

Method:

Cook quinoa to package specifications – cool and reserve

pre heat the oven to 400 F – toss the onions, red peppers and zucchini in a little oil and evenly place on a baking sheet – roast for 10 minutes, cool and dice .

Whisk to gather all dressing in a stainless steel bowl – set aside.

Fold together apples, artichokes, roasted veg into the cooked quinoa, add dressing and season to taste – chill and serve!
