New:Burnt honey and dried apricot Couscous

Ingredients:

  • 2 cups of whole wheat couscous
  • 1 cup of Molson 67 beer
  • 1 cup of good quality chicken or vegetable stock
  • 2 shallots sliced very thin
  • 1 clove of garlic – crushed
  • ½ cup of dried apricots – minced
  • 1 tbsp clover honey
  • 1 lemon – juiced and zested
  • 2 tbsp butter
  • ¼ cup fresh sliced chives
  • salt and pepper to taste

 Method:

  • Heat a four quart pot on medium and add butter. Warm butter until it foams and starts to brown.
  • Add sliced shallots and crushed garlic clove. Sweat for one minute.
  • Add honey and caramelize a dark golden brown.
  • Add wheat ale and simmer for 5 minutes
  • Add stock, lemon juice, zest seasoning and apricots – remove from heat.
  • Add couscous and cover – stand for 5 minutes
  • Add chives and fluff the couscous with a fork.
  • Adjust seasoning and serve.
