New:Burnt honey and dried apricot Couscous
Ingredients:
- 2 cups of whole wheat couscous
- 1 cup of Molson 67 beer
- 1 cup of good quality chicken or vegetable stock
- 2 shallots sliced very thin
- 1 clove of garlic – crushed
- ½ cup of dried apricots – minced
- 1 tbsp clover honey
- 1 lemon – juiced and zested
- 2 tbsp butter
- ¼ cup fresh sliced chives
- salt and pepper to taste
Method:
- Heat a four quart pot on medium and add butter. Warm butter until it foams and starts to brown.
- Add sliced shallots and crushed garlic clove. Sweat for one minute.
- Add honey and caramelize a dark golden brown.
- Add wheat ale and simmer for 5 minutes
- Add stock, lemon juice, zest seasoning and apricots – remove from heat.
- Add couscous and cover – stand for 5 minutes
- Add chives and fluff the couscous with a fork.
- Adjust seasoning and serve.
