Aged cheddar and Scallion Biscuits
2.5 cups all purpose flour
2 tbsp sugar
2.5 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup cold butter
1 cup buttermilk
1 large egg
¼ cup sliced scallions
½ cup aged white cheddar
Method
- Preheat oven to 400 F
- Prepare a baking sheet with parchment paper
- Measure flour, sugar, baking powder, soda, and salt into a large bowl
- Using a box grater – grate cold butter into the four mix – mix well
- Add sliced scallion and cheddar
- Create a well in the center of the butter/flour mix and add egg and buttermilk
- Using clean hands mix together gently – do not over work the dough!
- Portion 12 drop dough biscuits onto prepared baking sheets.
- Bake for 10 – 12 minutes until a golden brown
- Remove and rest for 5 minutes – serve warm
