Pumpkins for Prostate!
Once again a huge amount of gratitude to my friends at Breakfast Television on the A channel! It is always a pleasure to be on the show!
Thanks for all who tuned in to hear about the special fundraising I am doing with Pumpkins for Prostate! I am growing pumpkins with other local Halifamous personalities (Halifamous means my mom thinks im cool!) and all the proceeds go towards Prostate cancer reaserch and care.
On the show I made some pumpkin risotto – well I cheated because we all know there are no local pumpkins ready yet. I used butternut squash!
Here is the recipe! and remember you can still sponsor me untill the end of September!
Pumpkin Risotto!
2 tsp butter
1 tsp. olive oil
3/4 cup Arborio rice
3 cups chicken stock
1 cup peeled and grated pumpkin
a few sprigs of fresh sage
5 tbsp. fresh grated parmesan cheese
¾ cup diced onion
½ cup maple wine
2 bay leaf
Salt and pepper to taste
Heat the 2 cups of stock in a large stock pot – simmer but do not boil
In a large braising pan add the butter and olive oil and heat on medium
Add the onions to develop some flavour – cook about 5 minutes
Add rice and sauté for 2 minutes – allow toasting slightly, adding pumpkin
Add the sage pieces and slowly add the warm stock a little at a time, add more when liquid evaporates
Continue to cook risotto slowly – do not allow to boil – always simmer – this takes approx 20 -30 minutes
Season to taste- remove the sage and garlic
Remove from stove and add cheese and cool
Season to taste
