Aged cheddar and Scallion Biscuits

2.5 cups all purpose flour
2 tbsp sugar
2.5 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup cold butter
1 cup buttermilk
1 large egg
¼ cup sliced scallions
½ cup aged white cheddar

Method

  1. Preheat oven to 400 F
  2. Prepare a baking sheet with parchment paper
  3. Measure flour, sugar, baking powder, soda, and salt into a large bowl
  4. Using a box grater – grate cold butter into the four mix – mix well
  5. Add sliced scallion and cheddar
  6. Create a well in the center of the butter/flour mix and add egg and buttermilk
  7. Using clean hands mix together gently – do not over work the dough!
  8. Portion 12 drop dough biscuits onto prepared baking sheets.
  9. Bake for 10 – 12 minutes until a golden brown
  10. Remove and rest for 5 minutes – serve warm

Chilled rotini with lemon basil and fresh summer peas

1 lb of whole wheat rotini – cooked, drained and cooled

Veggies and mix

2 cloves of garlic – minced
3 stalks of green onions – sliced
2 carrots – julienne
2 red peppers – diced
1 cup of fresh shucked peas
½ cup fresh chopped basil
¼ cup fresh chopped flat leaf parsley
½ cup fresh grated parmesan

Dressing

2 lemons – juiced and zested
¼ cup of honey
1 tbsp Dijon mustard
¼ cup of extra virgin olive oil
sea salt and pepper to taste

Method

  1. Mix together the pasta, vegetables, herbs and cheese.
  2. In a mixing bowl whisk together the Dijon, lemon juice and zest.
  3. Add the honey and slowly drizzle in the oil while you whisk – season
  4. Add the dressing to the pasta mix – chill for 30 minutes and enjoy!

This Friday July 17th Chef Live will be featuring and sampling Game Day Canadian Maple Chilli Wings at the Maxim Coors Light Golf Caddy Party at the Granite Sprngs Golf Course starting at 7pm!

This recipe is a twist of proudly canadian and thai flavours…pair these wings with cold Coors Light and you have a winner!!!

Coors Light Game Day Canadian Maple Chili wings

1 lb chicken drums and thighs
1 tbsp canola oil
2 tbsp butter
¼ cup balsamic vinegar
1 tbsp Thai red chilli sauce
3 tbsp pure maple syrup
3 tbsp fresh cilantro – chopped
1 clove garlic minced
1 lime
3 sprigs of green onion

Method

  1. Preheat oven to 400F
  2. Place chick on a baking sheet lined with parchment paper
  3. Cook for 15 minutes, remove and cool
  4. Heat a large frying pan on medium heat
  5. Add oil and sear wings for 2 minutes each side
  6. Add butter , allow butter to melt and foam
  7. Add balsamic, chilli, maple and garlic, toss ingredients thoroughly.
  8. Turn down heat to low and simmer for 5 minutes
  9. Season with salt and pepper
  10. Transfer wings to a serving platter
  11. Garnish with sliced green onion and lime wedges
  12. Serve with cold Coors Light!!!
